Banana Bread

Ingredients:

  • 2 cups plain flour

  • 2 tsp baking powder

  • 1 tsp ground cinnamon

  • ½ cup caster sugar

  • ½ cup brown sugar

  • 2 eggs, lightly beaten

  • 1/3 cup (80mL) oil

  • 1 tsp vanilla extract

  • 4 ripe mashed bananas

 

Method:

1. Preheat the oven to 180°C.

2. Grease and line the base of a loaf pan.

3. Sift the flour, baking powder and cinnamon into a large bowl.

4. Stir in all the sugar.

5. In a separate bowl, combine the eggs, oil and vanilla.

6. Add a mashed banana to the dry ingredients and add the wet ingredients.

7. Fold until just combined but don't overmix it.

8. Place mixture into the loaf pan and bake for 50 minutes or until a skewer inserted into the middle of the loaf comes out clean.

9. Allow it to cool for 10 minutes, then remove and place on a wire rack to cool.

10. Once cooled, slice it thickly.

 

Serving Suggestions:

Serve with butter, honey, sugar, cinnamon, jam, lemon curd, marmalade or just plain.
